Vinification :
De-stemming after harvesting; vinification by type of vine under controlled temperatures; long maceration for 40 to 45 days. Assemblage after malo-lactic fermentation; maturing and refining in vats and barrels. Bottled 15 months after harvesting.
Tasting :
Very fine red color with garnet highlights.
Nose at first fruity, with candied red fruits and dried fig, followed by chocolate and caramel. Vanilla finish; great complexity.
Strong attack in the mouth, with evident, full-bodied tannins.
The aromatic palette of the nose returns; fine balance, good length with persistent vanilla and chocolate.
Keeping time: 4 to 6 years
Goes well with: grilled meats
